A “beefy” or rancid smell can come from aged, overheated, or poorly sourced tallow made from trim fat or a conglomerate of beef fats. We use only fresh suet from regenerative Stemple Creek Ranch in Tomales Bay, hand-rendered in small batches using slow, traditional methods.
